At the beginning of the process, the fish is dipped in a brine tank (water and salt solution) where it is washed. After cleaning it is placed in brine to preserve and give firmness. Then it is placed in cans and passes the quality control, it is cooked and finally the respective seasoning is added. The cans are sterilized and sealed.
