The carob tree has been known for at least 4000 years and is probably the most emblematic tree in the Algarve. Carob honey has a dark color, thick texture and chocolatey aroma with a slightly bitter aftertaste. It is a unique and delicious honey.
The collection of this honey takes place from late May to mid-July, resting until September/October, after which it is centrifuged and packed in glass jars.
Carob is often used as a healthy substitute for chocolate, as it lacks caffeine and has less fat.
Therapeutically, it helps to normalize intestinal and nervous system problems. Rich in antioxidants, honey helps to lower blood pressure, in addition to containing antimicrobial properties, fighting infections caused by fungi, viruses and bacteria and relieving sore throat and cough. It can be used as a natural sweetener. However, even with all these benefits, honey should be consumed in moderation. It is recommended to take 2 teaspoons of honey a day. It should not be given to children under one year of age.
It can be added to teas, juices, lemonades, cookies, cakes or other culinary recipes. Or used in masks for skin and hair.
